Mango pudding

Ripe mango- 3
Thick Coconut milk-1/2 cup
Sugar-1 cup
Gelatin-3 tspn
Hot Water-1/2 cup
Fresh cream-1/4 cup ( optional)
1. Cut 2 mangoes and make a smooth mango puree( make sure your mangoes are sweet )
2. Cut the remaining one mango into very small cubes and keep aside.
3. Add gelain and sugar to hot water and stir with a whisk or fork so that no lumps are formed.Stir till sugar and gelatin completely dissolves.
4. In a bowl mix together the hot water mix, coconut milk and mango puree.Stir and mix well. In this stage ,you can add fresh cream too. ( it gives extra richness to the pudding)
5. Add the mango pieces to the pudding.
6. Pour into dessert bowls or cups and place in the refrigerator for atleast 2 hrs.
7. Garnish with mango pieces and mint leaves
Serve chill.
