Meatloaf with roasted carrots

Ingredients for Meatloaf
1 lb ground beef
1 egg
1 ½ cups seasoned bread crumbs
1 tbsp minced garlic
1 cup cheese (shredded cheddar or grated Parmesan)
salt
pepper
onion powder
Italian seasoning
Worcestershire sauce (to taste)

Ingredients for carrots
1 small bag of baby carrots
½ stick butter, melted
salt
pepper
Italian seasoning

Prep. Time → 5 min

Cook Time → 60 min

1. For Meatloaf:

2. Preheat oven to 375F/190C/GM 5

3. Mix all in a large bowl until well combined.

4. Transfer to glass baking dish and form into a loaf

5. Cook for 1 hour and cool slightly. Serve with ketchup or gravy on the side.

6. For Carrots:

7. Combine all in a bowl, and mix until carrots are evenly coated.

8. Half way through the cook time (about 30 min) surround meatloaf with coated carrots as evenly as possible. Place back in oven for remaining 30 min.
