1 pack of 8 Bowyers Mediterranean sausages (from the chiller cabinet)
1 red onion, chopped
1 red pepper deseeded and chopped
1 yellow pepper deseeded and chopped
1 tin chopped tomatoes with garlic
4 large eggs

1. Chop sausages and cook with onion in non-stick pan sprayed with a little Fry Light. Add peppers and cook for 2-3 minutes. Add tin of tomatoes and heat through. Divide between 4 individual oven-proof dishes and make a hollow in the centre of the mixture. Break an egg into each hollow and bake in a pre-heated oven (Gas 6) until the egg white is set (about 10 minutes)
