Mediterranean inspired couscous salad

1 cup cooked couscous, chilled
1-2 tomatoes diced
1-2 cucumbers diced
1 green pepper diced
1 red pepper diced
5 scallions chopped
1 tsp cumin
juice of 1 lemon or lime if you prefer
1 tbsp extra virgin olive oil
1 tsp salt & pepper to taste

Prep. Time → 15-20 min

Cook Time → 30 min

1. Cook couscous according to package directions then put in refrigerator to chill. While it is chilling, chop the tomato, cucumber, peppers, & scallions ingredients and put in a large bowl. Mix together in a separate bowl the cumin, lemon (or lime) and olive oil with salt and pepper. When couscous is cooled, pour in with chopped veggies and then pour cumin mixture over and mix well. Return to refrigerator for 30 minutes to chill and then serve.
