Mediterranean Tuna Pasta of Michele Poole - Recipefy

2 tbsp. Olive Oil
1 small onion, chopped
4 cloves garlic, chopped
1/2 tsp dried Italian herb seasoning
1/4 tsp hot pepper flakes
1 pkg frozen chopped spinach, thawed ( I use fresh spinach, better)
1 can (28oz) stewed tomatoes
1/4 cup sliced black olives
2 tbsp. drained rinsed capers
1 tsp salt
2 cans tuna, drained
4 cups penna pasta
grated parmesean cheese

Cook Time → 15-20 min min

1. Heat oil over med heat, cook onion, garlic, Italian herb seasoning and hot pepper flakes, until softened (5 Min). Squeeze spinach dry, add to pan along with tomatoes, breaking up tomatoes with spoon. Add olives, capers and salt. Bring to a boil. Reduce heat and simmer about 10 min. Break tuna into chunks and add to sauce. Meanwhile, cook penne and then add to sauce and toss. Sprinkle with cheese and serve
