Memere's bread stuffing
Slightly stale bread (about 1/2 loaf) broken into pieces
1 large potato, diced
1 stalk celery, halved lengthwise and sliced
1/2 - 3/4 cup chicken broth
1. Using a double boiler, layer potatoes, bread cubes, celery, poultry seasonings, salt, pepper and a few slices of butter. Layer 3-4 times.
2. Pour 1/2 to 3/4 cup of chicken broth over the stuffing.
3. Cover and cook on medium heat for 4-6 hours or until potatoes are tender (the longer the better!).
