Microwave pudding

2 cups milk, divided, evaporated or whole
1 1/2 cups sugar
4 Tablespoons flour
3 eggs
1/4 teaspoon salt
2 Tablespoons butter
2 teaspoons vanilla

1. Use a large bowl or it will boil over in microwave. Adjust times and power according the power of your microwave.
Microwave 1 1/2 cups milk on high until warm, about 2 minutes.
Mix sugar and flour together and add to warm milk.
Microwave for 3-4 minutes, stopping half way through to stir.
Blend together the eggs and remaining 1/2 cup milk.
Temper with hot mixture and then add to hot pudding.
Cook for 1 minute intervals until custard is thick, stirring between each minute of cooking until
thick.
Stir in 2 tsp. vanilla and 2 Tablespoons butter.
Variations: Chocolate: Add 3 Tbsp. chocolate to sugar-flour mixture.
Coconut: Stir 1 can of coconut into the custard mixture.
