vegetable oil
1/4 medium onion (chopped)
1/2 medium bell pepper (chopped)
1 jalapeno pepper (diced)
1/2 cup cooked black beans
2 cups tortilla chips or tortillas, broken/cut into pieces
4 eggs
splash of milk or cream
fresh cilantro (for garnish)
chopped avocado (for garnish)
shredded cheddar cheese (for garnish)
chopped tomatoes (for garnish)

Prep. Time → 20 min

Cook Time → 20 min

1. Mix the eggs and milk in a bowl and set aside

2. heat a large skillet over medium high heat.

3. film the pan with vegetable oil

4. add the onion, bell pepper and jalapeno

5. cook for 2-3 minutes

6. add the black beans and tortilla pieces (or chips)

7. Mix well and allow the beans to heat through.

8. Add the eggs.

9. Mix until the eggs are cooked

10. We like to separate this out into serving bowls and have a range of garnishes for everyone to assemble what they want. This recipe works well with serrano peppers. Also feel free to vary the vegetables or add more of a more favorite vegetable.
