6 cups water
1 (15 oz) can red kidney beans
1 (14 oz) can diced tomatoes with basil and oregano
1 medium onion, chopped
2 stalks celery, sliced
2 medium carrots, thinly sliced
4 teaspoons instant beef bouillon granules
1 teaspoon oregano
1 teaspoon basil
2 cloves garlic, minced
1/4 teaspoon pepper
2 small zucchini, halved lengthwise and sliced
1 cup tiny shell macaroni
1. In a large saucepan, combine all ingredients except for zucchini and macaroni.
2. Bring to a boil, stirring occasionally. Reduce heat and simmer covered for 15-20 minutes or until tender.
3. Stir in zucchini and macaroni and cook uncovered for another 5 or so minutes or until pasta are done.
4. Serve sprinkled with parmesan cheese.
