Mini pizzas
Recipe by Kitchen Snippets
Dry Yeast-2 tspn
Sugar-1 1/2 tspn
Warm water-1/4 cup
Salt-1 tspn
Milk-3/4 cup
Olive/vegetable oil-1 tspn( don't use coconut oil )
All purpose flour-2 1/2- 3cup (see notes )
For topping
Boneless chicken-1 cup ( cut into bite sized pieces )
Mushroom-1 cup( Cut into slices )
Origano-as per your taste
Pepper powder-1 tspn
Salt
Pizza sauce-1/2 cup
Grated cheese -as per your taste
1. Step 1.
2. 1.Mix yeast with 1/2 tspn sugar and warm water and leave it in a warm place till
the yeast granules are dissolved well and the mixture becomes foamy.( the yeast mixture should swell/rise well and bubbling )
2.Mix together 1 tspn sugar,1 tspn salt and 1 tspn oil.Add the yeast mixture to it and combine well.
3.Pour this to the flour and knead well to form a smooth dough.Pour the milk mixture little by little and start kneading.The dough is ready is when it is smooth and non sticky.(see notes )
4.Grease a deep pan with some oil and place the dough in it.Cover the pan and keep in warm place for 1 hr or till the dough is double in size.

4. 1.Heat little oil in a pan and add the chicken pieces ,salt and 1/2 tspn pepper powder.Mix well,add little water and cook for few mints till the chicken pieces are cooked and water dries up(this will take only 4-5 mints.)Remove from fire.
2.In the same pan add little more oil and add mushrooms,a pinch of origano ,1/4 tspn pepper powder and salt.Saute for few mints till the mushrooms change colour.Remove from fire.
5. Step 3.
6. 1.Divide the pizza dough into 4 equal parts.Roll each of them into medium thick circles.
2.Brush some oil on the top of the rolled pizza dough.Transfer it to baking dish.
3.Spread a spoon full of pizza sauce on each pizza crust.
4.Place chicken and mushroom toppings on all of them.
5.Sprinkle grated cheese on top.
4.Bake in pre-heated oven for 15-20 mints at 180 C or 350 F.
7. Notes: While kneading dough ,first take 2 1/2 cup flour and knead by adding the milk mixture.If the dough appears to be too sticky,sprinkle little more flour and continue kneading .Sprinkle more flour if needed and knead till the dough is smooth and non sticky.Be careful while adding extra flour ;add only little by little.
8. You can make four small pizzas using this quantity.You can adjust the size and thickness of the pizza crust according to your choice.
