Monterey Chicken of Karyn Johnson - Recipefy

4 boneless, skinless chicken breasts
1/4 cup barbecue sauce (optional)
1/4 cup real bacon bits
1 cup shredded Colby jack cheese
1 14oz. Can Rotel tomatoes, drained
3-4 green onions, sliced
Salt and Pepper

1. Preheat oven to 400°F

2. Pound out chicken breasts to flatten. Season with salt and pepper.

3. Bake on foil lined cookie sheet until no longer pink, about 25 minutes.

4. Top each breast with one tbsp barbecue sauce, 1/4 cup of cheese, 1/4 cup of tomatoes, green onions and one tbsp bacon bits.

5. Return to oven and bake until cheese is melted, about 5 minutes

6. (If there is time, you can marinate the breasts for a couple hours or over night. I like to use Italian dressing. I served this with green beans sautéed with bacon, onions and mushrooms!)
