Olan of Kitchen Snippets - Recipefy

Black beans/vanpayar -1/2 cup
Long beans/achinga payar -1/4 cup(optional )-cut into medium long pieces
Ash gourd/kumbalanga-2.5 -3 cup-cut into cubes
Green chillies-2
Water-2 cups
Thick coconut milk-3/4 -1 cup
Curry leaves
Salt
Coconut oil

1. Pressure cook the black beans with enough water asd salt.No need to soak the beans before cooking.The beans should not be over cooked.They should retain the shape.

2. Cook the the ash gourd , long beans green chillies by adding 2cups of water and salt till they become tender.Don't overcook the vegetables as they should retain shape.

3. Add cooked beans and mix well.Add thick coconut milk and curry leaves.Cover and cook in the lowest flame for about 7-8 mints.

4. Remove from fire and drizzle some coconut oil.Don't mix immediately,cover and let it rest for 5 mints.

5. Mix well before serving.

6. Notes: You can make olan using pumpkin and long beans. Follow the same method.Use tender yellow pumpkin.
