Orange pancake slips

1 orange per person, pancake batter (or find a recipe), 20g sugar.

Prep. Time → 15 min

Cook Time → 5 min

1. Peel an orange and take the segments apart.

2. Roughly chop the orange segments and put in a bowl with the sugar. Let the sugar soak the juice for about 10 minutes in the fridge.

3. Separate the orange from the sugar and put each into a separate bowl.

4. Get a tsp of Sunflower Oil and put into a hot pan.

5. Once heated, put the pancake batter in and quickly swirl it, don't let it go in one place, that'd make a mess.

6. Put the some of the orange into the wet batter.

7. Now once the underside of the pancake is done, fold it over the oranges and pat it down quite firmly.

8. Make as many of these as possible.

9. Now slice the pancakes lengthways so you get about 6/7 slices per pancake.

10. Serve with some of the orange sugar and mint to garnish.
