Pear and almond tart

For the pastry
250 g plain flour
25 g icing sugar
125 g unsalted butter
8-9 teaspoons of cold water

For the filling
40 g unsalted butter (softened)
125 g caster sugar
125 g ground almonds
2 eggs (lightly beaten)
lemon juice (1 table juice)
2 ripe pears, pealed, cored, and thickly sliced
25 g flaked almonds
icing sugar for dusting

Prep. Time → 20 min

Cook Time → 55 min

1. The pastry:
Place the flour and sugar in a bowl. Add the sugar and diced butter.
Rub the butter into the flour and mix till the mixture resembles fine breadcrumbs.
Add water and mix to bring mixture together into a ball.
Knead the pastry, rap in clingfilm and refrigerate for 15 minutes.
Roll out pastry and use to line a 25 cm flat tin.
Prick the base with a fork and bake blind for 15 minutes at 190 oC (base covered with baking paper filled with rice, macaroni or beans).
Remove baking paper and rice, macaroni or beans and bake for a further 10 minutes.
Remove from oven and leave to cool completely.

2. The filling:
Beat the butter, sugar, and ground almonds together until smooth.
Then beat in the eggs and lemon juice.
Arrange the pear slices over the pastry case and spread over the almond mixture.
Sprinkle with flaked almonds and bake for 30 minutes until the topping is golden.
Remove from oven and leave to cool.
Dust the tart with sifted icing sugar.
