Pear hazelnut and chocolate cake
Recipe by4 ounces /100g blanched hazelnuts
5 ounces/125g self raising flour
6 ounces/150g butter (cut into small pieces)
5 ounces/125g caster sugar
2 large eggs (beaten)
5 small ripe pears or 4 large (conference)
3 ounces/75g dark chocolate (chopped into small chunks)
2 tablespoons apricot jam
Takes 60-80 mins (serves 8)
Prep. Time → 20 min
Cook Time → 60-80 min
1. Method :
Preheat oven to 160 0c fan oven will be 150 butter and line the base of a round 8 inch cake tin
Grind the hazelnuts in a food processor until fairly fine, add flour and stir briefly add butter and pulse until it forms crumbs
Add the sugar and beaten eggs and mix briefly
Peel,core and chop two of the pears stir them into cake mixture lightly along with the chopped dark chocolate pieces
Spoon mixture into the prepared tin and smooth top
Peel,core and slice the remaining pears
Scatter them all over the top of the cake press down lightly into mix
Bake for 60-80minutes until firm to the touch
Cool the cake slightly then warm apricot jam brush over top to glaze the cake
Serve warm with clotted cream also cake can be eaten cold
