Pink surprise
Recipe by
Rice noodles-1 cup cooked ( see notes )
Green peas-1/4 cooked(with salt)
Carrot- cut to cubes and cooked(with salt)
Onion-1 small chopped
Grated ginger-1/2 tspn
Green chillies-optional ( see notes)
Oil
Salt
For pink colour
Beetroot-1/4 cup chopped
Onion-2 tblspn chopped
Garlic-1 small pode
oil-1 tspn
Salt
1. Heat oil in a pan and saute onion,beetroot and garlic.Sprinkle enough salt.Mix well.Add 1/4 cup water,cover and cook for 3-4 mints.
Remove from fire.Using a strainer seperate the beetroot pieces and the juicy water.
Pour the beetroot juice to the cooked rice noodles and mix well till they turn pink.
2. Heat oil in another pan and add chopped onion,grated ginger,green chillies.Saute till the onions turn transparent.Add cooked carrot and green peas. Add pink noodles and mix well.Remove from fire and serve hot.
3. Notes: Rice noodles are easily available in Asian grocery.
How to cook:
Soak rice noodles in water for 10-15 mints
Boil a good quantity of water and add soaked noodles and enough salt. Every minute or two, give the noodles a stir to loosen them up. Thread-like vermicelli noodles will cook through in just a few minutes. The flat rice noodles might take up to ten minutes depending on thickness( i have used the flat ones) . Be careful and test the noodles frequently because they’ll become mushy if they are overcooked.Once the noodles are tender, drain them and run them under cool water to stop the cooking
