Wheat flour-2 cups
Salt
Oil
For Masala
Potatoes-2 big
Onion-1 chopped
Ginger-1 tspn
Garlic-1 tspn
Green chillies-3
Tomato-1 chopped
Curry leaves
Turmeric powder-1/2 tspn
Mustard seeds-1/4 tspn
Urad dal-1 tspn
Oil
1. Poori making
2. Make a dough using wheat flour,enough salt and water.The dough should be similar to that of chapathi dough.Drizzle little oil on top and keep aside for 15 mints.
3. Make equal lemon sized balls out of the dough.Roll out each ball to medium thick circles.You can also roll a large portion of the dough to medium thick sheet and then cut small circles out of it.( use lid of some steel container ).Don't roll them as thin as we do for chapathi; it should be of medium thickness.
4. Heat oil in a pan .When it is hot enough,drop the poori into it.Press on top with a spoon so that it puffs up( video attached below ).Cook on both sides till it is light brown.Remove from fire.repeat the same with all the rolled out pooris.
5. For making masala for poori
6. Boil and peel the potatoes.Cut them into pieces.Take some pieces and mash them . Keep remaining pieces as such.
7. Heat oil in a pan and splutter mustard seeds .Then add urad dal.When urad dal becomes light brown add cubed onion,ginger,garlic,green chillies and curry leaves.Saute till the onions turn transparent and raw smell of ginger and garlic goes.them add chopped tomatoes.Mix well ,sprinkle little salt,cover and cook in medium flame till the tomatoes become soft and mushy.Then add turmeric powder and potatoes ( both mashed and pieces ).Mix well and add 1/4 to 1/2 cup water.Cover and cook till the gravy becomes thick enough.Remove from fire and serve with hot pooris.
