Onion-1 small
Green chilli-2
Turmeric powder-1/4 tspn
Red chilli powder-1/2 tspn
Coriander powder-1/2 tspn
Dry mango/amchur powder-1/4 -1/2 tspn
Oil
Salt
1. Wash ladies finger thoroughly and dry completely using a paper towel.Cut them into 2 inch long pieces.
Heat 2 tblspn oil in a pan and add the ladies finger pieces.Sprinkle little salt and saute till they become soft and change colour to lighly brown on all sides. ( This would take around 5-10 mints ) Remove from fire and keep aside.
2. In the same pan,add 1 tblspn more oil.Then add cumin seeds.When they splutter,add sliced onions and green chillies.Saute till the onions turn light brown.
Then add the okra/ladies finger pieces.Saute for 1 mint.Then add all the masala powders and dry mango powder.Sprinkle salt,mix well.Add 2-3 tblspn water,cover and cook for 3-4 mints in low flame.By this time ,all the water should have dried up.Remove from fire and serve with roti/chapathi.
