Quinoa, edamame, lentil salad
Recipe by1 cup quinoa
1 cup shelled edamame
1 can lentils drained and rinsed
2-3 cups of chopped raw veggies (peppers, snap peas, cauliflower, brocolli, celery, carrots, kale, whatever)
2 cloves garlic minced
1/2 cup chimichurri sauce
Juice of 1/2 lemon
1/2 tsp cumin
Salt and pepper to taste
Prep. Time → 25 min
Cook Time → 5 min
1. Prepare quinoa are per directions (boil 2 cups water, add 1 cup quinoa, cook on low for 15 minutes. set aside for 5 minutes)
2. Add everything else and mix it up.
3. Let sit in fridge for at least 2 hours. Serve cold.
