- 340gm (12oz) Quorn pieces
- 454gm (1lb) Syn-free vegetables of your choice, chopped fairly small
- 198gm (7oz) extra light soft cheese with garlic & herbs (14 Syns)
- 200ml (7fl oz) skimmed milk (3 Syns)
- 2tsp fresh or dried herbs
- 454gm (1lb) potatoes, peeled and quartered
- 1 medium sweet potato, peeled and quartered
- Fry Light
1. Method
1. Preheat oven to 200C / 400F / Gas 6. Boil the potatoes for 20 minutes or until soft.
2. In a saucepan, mix the extra light soft cheese and 150ml of the milk over a low heat until combined. Leave to one side until ready to use.
3. When the potatoes are soft mash together with the herbs and remaining milk.
4. Spray an ovenproof dish with Fry Light. Add the Quorn pieces and the Syn-free vegetables and cover with the cheese sauce, mixing together until everything is coated.
5. Spread the mashed potato over the top and bake in the oven for 30-40 minutes, depending on the size of the vegetables (larger pieces will require a longer cooking time).
