My mom use to make this pie all the time. They serve it at Luby’s and it is rich and delicious. 22 Ritz crackers 1 tsp. vanilla 3 egg whites 1 cup pecans 1 cup sugar whipping cream

1. Beat egg whites very stiff and gradually add sugar. Crush crackers. Add vanilla, pecans and crackers to egg whites. Bake in well buttered pie plate at 300 for 25 minutes. Cool and top with whipped cream.
