Leg of Lamb, 6 cloves of garlic cut into slivers, 3 sprigs of fresh rosemary and 1x 75g can anchovy fillets in oil and olive oil

Prep. Time → 10 min

Cook Time → 25 min

1. 1.Preheat oven to 180/350/gas mark 4

2. 2.Make small cuts all over the meat and insert a sliver of garlic, a small piece of rosemary and half an anchovy fillet into each cut until all the ingredients are used up.

3. 3.Drizzle a little olive oil and roast in the oven, allowing 20mins per 450g (1lb) for meat that is pink in the centre, 25mins if you prefer it more well done.

4. 4.Once this joint is cooked to your liking, remove and allow it to rest before you carve the meat.
