Roasted fish with Infused olive oil of Sonoma Farm - Recipefy

• Potatoes peeled and sliced (700 gm)

• Infused olive oil (250 ml)

• Rosemary 4-5 sprigs

• Sage and thyme 4 sprigs

• Garlic cloves sliced (5)

• Red chili dried ½

• Fennel seeds (2 tsp spoons)

• Tomatoes (1 kg), onion finely chopped (100 gm)

• Lemon ½

• 1 ling whole scaled and gutted

• Salt and black pepper

Prep. Time → 25 min

Cook Time → 50 min

1. • Keep your oven on 200c to preheat.

2. • Boil potatoes for about 10 min. they should be cooked but little bit hard. Once they are done wash them with cold water and keep them away.

3. • Take the saucepan heat it and put Infused Olive Oil into it, now add 2 sprigs of Rosemary, sage, thyme, garlic, chili and fennel seeds. Now mix all these together and cook them on medium heat till garlic turns brown. Once it’s done remove pan from heat.

4. • Take a baking dish and coat it well with infused olive oil, overlap potatoes in a line, then arrange a line of tomatoes, overlapping potatoes, once it’s done now brush it with some more olive oil. Now sprinkle some chopped onion, some salt and pepper on it. Put it in oven for about 15 min. until tomatoes become dry and potatoes get a brownish color.

5. • Now take put lemon slices and remaining rosemary sprigs inside cavity of fish and place it on barebacked potatoes, brush the fish with some oil and sprinkle some salt on it. Now put it again inside the oven and cook it for about 20 min. or so.

6. • Remove from oven and serve it hot, garnish with garlic cloves and lemon slices and some sprinkled olive oil.
