Savory bread pudding
Recipe by8 oz multigrain bread, cubed
3 oz shredded sharp cheddar cheese, divided
3/4 cup fat free milk
1/4 cup chicken broth
1/8 tsp black pepper
3 oz ham chopped
2 large egg yolks, lightly beaten
3 large egg whites
Prep. Time → 20 min
Cook Time → 20 min
1. Preheat oven to 350.
2. Place bread cubes on a baking sheet coated with cooking spray and toast in the oven for 10 minutes turning once. Allow to cool completely.
3. Combine bread, 2 oz cheese, egg yolks, broth, milk, pepper, and ham in a medium bowl. Beat egg whites with a mixer on high until foamy (about 30 seconds). Fold egg whites into bread mixture.
4. Place mixture into a small casserole dish or four individual 7 oz ramekins coated with cooking spray. Top with remaining 1 oz cheese.
5. Bake for 20 minutes.
