Scottish high fiber oat muffins
Recipe by3/4 cup whole wheat flour [or gluten free all purpose flour]
3/4 cup bob's redmill high fiber cereal [or oar bran for gluten free]
1/2 cup brown sugar
1 tsp baking Powder
1 tsp cinnamon
1/2 tsp baking Soda
1-2 mashed banana's
1/2 cup plain yoghurt [or coconut cream for dairy free]
1 egg
2 TBSP vegetable oil
1/2 tsp vanilla
1/2 cup shredded carrot
1/2 cup chopped walnuts or pecans
1. Mix dry ingredients together. In a separate bowl mix wet ingredients. Combine mixes until moist. Fold in carrots and nuts.
2. Lightly grease or line muffin tin with paper cups. Fill 2/3 full. Bake at 400 degrees for 18-20 minutes.
