Sea bass with sweet potatoes and lemon and chive dressing

4 sweet potatoes, 2 sea bass fillets, lemon juice, handful of chives, butter

1. peel and chop potatoes and place in boiling water until soft

2. Place butter, lemon juice and chopped chives into frying pan for 40 seconds

3. place sea bass fillets in pan skin side down and fry for three minutes on each side

4. mash the potato and and place in centre of plate, place the fillet on top and pour the lemon and chive dressing over the top.
