Shiner Bock Beer Brined Pork Chops of Craig Engle - Recipefy

4 1 inch thick bone in pork chops
2 bottles of shiner bock beer
2 cloves of garlic
1 tbsp black pepper corns
1/4 cups of salt
1/8 cup brown sugar
1/8 cup molasses

Prep. Time → 15 min

Cook Time → 8-10 min

1. In a large mixing bowl add the beer, garlic, pepper corns, salt, brown sugar, molasses and whisk to combine the ingredients.

2. lightly salt and pepper the pork chops and add to the brine, if the brine does not cover the chops add a little water until the chops are completely covered, put in the fridge for a minimum of 4 hrs

3. get your grill nice and hot, take the chops out of the brine and lightly pat dry with a paper towel then rub with a little olive oil.

4. grill the chops for 2 min turn 90 degrees and grill for 2 more min, then flip the chops and repeat the same process. check the temp, if your around 155 degrees take the chops off and let them rest for at least 5 min before eating. If the chops aren't up to temperature then move them off of the direct heat and let them finish slowly in the grill checking every 5 min or so.
