Shortbread cookies recipe

3/4 cup of unsalted butter, at room temp.
1 3/4 cups all-purpose flour
3/4 cup confectioner sugar
1/2 tsp salt
1 tsp vanilla extract
1 bittersweet chocolate, melted

1. 1. Preheat oven to 350*. Get a 9x9 Inch pan, spray with non stick spray, and put parchment paper; make sure the paper lifts up to the sides.

2. 2.In a standing mixer, add butter, confectioner sugar, vanilla extract: turn on medium low, and let cream together for a min; well incorporated.

3. 3.Add flour, and salt. Mix. once mixed, crack up the speed.

4. 4.Put dough in pan; press down to make even.

5. 5.Take a knife, and cut in 6 strips long wise; and 3 side ways:

6. 6.Take a fork, and prick 3 times in each one.

7. 7.Put in oven 350*, 20 to 25 mins till lightly brown.

8. 8.Once out of the oven, recut again. Then let cool compelety.

9. 9.Take some bittersweet chocolate, melt it, ( In mirowave)

10. 10.Take one shortbread cookie, dip in chocolate halfway, and place on wired rack, with parchment paper underneath it.
