Shrimp cobb salad
Recipe by
4 slices bacon
1 pound of shrimp, peeled and deveined
1/2 teaspoon paprika
1/4 teaspoon black pepper
Salt
1 1/2 tablespoons fresh lemon juice
1 1/2 tablespoons olive oil
1/2 teaspoon Dijon mustard
1 (10 ounce) package romaine salad
2 cups cherry tomatoes, quartered
1 cup shredded carrots
1 cup frozen whole kernel corn, thawed
1 avocado cut into wedges
1. Cook bacon in a skillet until crisp. Remove from pan and cut in half crosswise.
2. Wipe the pan clean with paper towels and heat over medium-high heat. Sprinkle the shrimp with paprika and pepper.
3. Coat the pain with oil and add shrimp to the pan. Cook for a few minutes (4-5) or until done - sprinkle with some salt.
For the dressing, combine 1/8 teaspoon salt, juice, oil and mustard and stir with a whisk.
Place lettuce on plates, top each lettuce serving with shrimp, tomatoes, carrot, corn, avocado, and bacon. Sprinkle with dressing.
