Simple coconut and chocolate chip cupcakes

100g (3 1/2oz) margarine
100g (3 1/2oz) caster sugar
2 free range eggs, beaten
100g (3 1/2oz) self-raising
dessicated coconut (as much as you please)
milk or dark chocolate chips (again as much you please)

Prep. Time → 10 min

Cook Time → 20-25 min

1. 1. Preheat the oven to 180 C and place the cupcake cases in the muffin tin.
2. Cream together the margarine and caster sugar until well combined.
3. Beat in the eggs then fold in the flour until the mixture is smooth.
4. Mix in the dessicated coconut and chocolate chips. Then using 2 teaaspoons dollop the mixture into the cases making sure they are all uniform.
5. Place in the preheated oven and cook for 20-25 mins until they are springy to the touch or a skewer comes out clean. Leave to cool then decorate or just eat them as they are.
