Simple egg salad
Recipe by Schalene Dagutis
6 hard boiled eggs, sliced
1/4 cup mayonnaise
2 teaspoons lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
Optional
1/2 cup celery, finely chopped
1/2 cup onion, minced
1. Mix mayonnaise, lemon juice, salt and pepper in medium bowl. (If you use minced onion, add it now.)
2. Slice eggs. Separate yolks from whites and add yolks to mayonnaise mixture. Stir vigorously to crumble yolks.
3. Chop sliced egg whites and add to egg yolk mixture. (If you use finely chopped celery, add it now.)
4. Chill for 2 or 3 hours.
