Skewered prawns fry/chemmeen eeerkilil kuthi varuthathu

Prawns-5 large/ 10 medium sized
Wooden skewers-5/10
For marination
Red chilli powder-1 tblspn
Turmeric powder-1/4 tspn
Homemade garam masala-1 tspn
Pepper powder-1/4 tspn
Lemon juice-1 tspn
Salt-as needed
For masala
Onion-1 thinly sliced
Ginger-1 tspn
Garlic-1 1/2 tspn
Green chillies-2
Small onion-5
Leftover marinade
Curry leaves
Salt
Oil
1. Soak the wooden skewers in cold water for 1-2 hrs.
2. Clean and devein prawns without removing the tail portion.Marinate with ingredients listed under 'for marination".Insert each of them in wooden skewers and keep for 30 mints-1 hr.Keep the leftover marinade to use in masala.
3. Heat oil in a pan ad shallow fry the skewered prawns till they are golden brown on both sides.( don't over cook prawns as they become rubbery.)Remove from fire.
4. In the same pan ,add sliced onions and saute till they turn golden brown.Then add crushed shallots,ginger,garlic and green chillies.Saute till the raw smell goes.
Now add the leftover marinade and mix well.Add curry leaves and enough salt.Add 2 tblspn water,cover and cook in low flame for 2-3 mints.
5. Then add in fried prawns,mix everything well.Cover and cook in low flame for couple of mints more.
6. Remove from fire and let it rest for few mints.
7. Serve hot.
