Smoked salmon fresh rolls
Recipe by1 lemon, juiced
1 T Capers
1 cup Greek Yogurt
Smoked Salmon, to your liking
Spinach Leaves, to your liking
1 cucumber
1 carrot, peeled
1 ripe avocado
Rice Noodles, to your liking
Rice Paper
1. Mix the Lemon juice, capers, and greek Yogurt to make a sauce. Cut slices from the smoked salmon. Julienne the carrot and the cucumber. Slice the avocado. Soak the rice noodles. Soak one rice paper at a time in a shallow dish of warm water for a few seconds until it is soft and bendable. Remove, let excess water drip off, and lay on a cutting board. Lay spinach leaves on the bottom third of wrapper, top with a few pieces of salmon, a few pieces of carrot, a few pieces of cucumber, & two or three slices of avocado. Fold the wrapper up over the filling and roll into a tight roll, folding the sides inward while rolling. The rice paper is sticky so go slowly when rolling. Cut each finished roll in half with a very sharp knife.
