Spiced apple cupcakes with salted carmel frosting

Ingredients for 24 cupcakes
CUPCAKES
1 1/2 biscuit mix
1/2 cup sugar
1 tsp apple pie spice
1/2 cup apple juice
2 TB softened butter (or Earth Balance)
1 tsp vanilla
1 egg (or egg replacer)
1 chopped, peeled bakers apple
FROSTING
See vanilla frosting
1/4 cup caramel (I like the Starbucks topping one)
1/4 tsp salt

Directions
1. Preheat oven 375 degrees
2. Sift dry ingredients
3. Beat wet ingredients
4. Beat wet and dry ingredients together
5. Fold in the apple
6. Bake 17-22 minutes
7. Mix frosting and caramel
8. Wait until cupcakes are completely cooled; frost; sprinkle with kosher salt
