Spicy tomato chowder sw

- Fry Light
- 1 onion, chopped
- 1 clove garlic, crushed
- 340gm (12oz) potato, peeled and finely diced
- 2 x 397gm (14oz) can chopped tomatoes
- 1 green pepper, deseeded and finely chopped
- 1tbsp chilli sauce (½ Syn)
- Salt and freshly ground black pepper
1. Method
1. Heat a large saucepan sprayed with Fry Light. Add the onion and garlic and fry over a medium heat for 5 minutes.
2. Add the potatoes, chopped tomatoes, pepper and chilli sauce and mix well with a wooden spoon.
3. Season to taste, cover and simmer for 20-25 minutes, stirring occasionally, until the potato is cooked. If the soup is a little thick add a small amount of water.
4. Serve with a Healthy Extra portion of wholemeal bread. For an extra tasty treat, top with
