Spinach and bean warm salad

2 cans (~800 g) white beans
1 onion, diced
2-3 cloves of garlic, minced
3 Tbsp olive oil
1-2 tsp ground caraway
5-8 medium tomatoes, diced
1 bunch spinach, washed
fresh coriander, minced
2 Tbsp lemon juice
salt, pepper

Prep. Time → 25 min

1. Drain and rinse white beans.

2. Fry onion and garlic in a medium pot with olive oil until translucent. Add caraway and fry for another 30 sec.

3. Add tomatoes and spinach to pot and cook on medium heat for 5 min.

4. Add coriander, lemon juice and beans. Cook until heated through, 2-3 min. Add salt and pepper to taste.
