Stefan's cinnamon shortbread

500g flour
500g butter (at room temperature)
200g castor sugar (plus extra for dusting)
2 t vanilla extract or seeds of 2 vanilla pods
Pinch of salt
Zest of 1 lemon (optional)
Cinnamon

Prep. Time → 30 min

Cook Time → 15 min

1. Preheat oven to 150°C (300°F). Sift all dry ingredients together.

2. Work in flour and butter with your fingertips until the whole bowl resembles crumbs. Push into a ball gently but firmly and allow to rest in your fridge overnight.

3. The following day, remove dough from fridge and allow to reach room temperature.

4. Roll out to desired thickness (ideally quite thin) and cut into desired shapes.

5. Place on a baking sheet, on greaseproof paper, and bake until a light golden brown. Place on cooling rack and dust with cinnamon and castor sugar.
