Stuffed french toast sticks

For the French Toast
4 large eggs, beaten (I usually plan 1 egg per 2 pieces of bread)
2 tablespoons milk
1 teaspoon vanilla
8 pieces of Texas Toast bread

For the Filling (use whatever you'd like - here are a few ideas)
Cream Cheese, cut into strips
Fresh or canned fruit, sliced (peaches, strawberries, raspberries, bananas, etc.)
Jam
Nutella spread
Chocolate chips
Peanut butter

For the Cinnamon Sugar Topping (simply mix to combine)
½ cup granulated sugar
1 teaspoon ground cinnamon

Other Items Needed
2 inch deep large pan for frying (may also use deeper)
Canola oil, for pan
Shallow and wide containers good for egg mixture and cinnamon sugar topping
Rolling Pin
Kitchen shears (for optional trimming)
Toothpicks

1. Cut off crusts of bread, if desired. Roll out each piece of bread with a rolling pin (this is oddly therapeutic to me).

2. Put in filling.

3. Roll and secure with toothpicks.

4. Dip into egg mixture.

5. Place in preheated skillet with about 1/4 to 1/2 inch canola oil in bottom.

6. Fry the first side (seam side down).

7. Pull the toothpicks out and flip over.

8. Finish cooking.

Roll in cinnamon sugar mixture…… and

9. Eat!
