Supreme breakfast casserole of Karyn Johnson - Recipefy

1 lb. bulk pork sausage
1 lb. ground beef
1 small onion chopped
3/4 cup sliced fresh mushrooms
1/2 cup chopped green pepper
1 tsp salt
1/4 tsp pepper
2 tbsp butter, melted
2 cups shredded cheddar cheese, divided
12 eggs
2/3 cup whipping cream

1. In a large skillet, cook the sausage, beef, onion, mushrooms and green pepper over medium heat until meat is no longer pink; drain. Stir in salt and pepper; set aside

2. Pour butter into an I greased 9x13 glass baking dish. Sprinkle with 1 cup cheese. Beat eggs; pour over the cheese. Top with sausage mixture. Pour the cream over sausage mixture. Sprinkle with remaining cheese.

3. Cover and refrigerate for 8 hours or overnight. Remove from refrigerator 30 minutes before baking.

4. Bake, uncovered, at 325°F for 35-40 minutes or until set. Let stand 10 minutes before cutting.

5. (I have always omitted the ground beef, and increased the mushrooms and peppers. Sometimes I add bacon. I have also skipped the 8 hour refrigeration step, and it turned out just fine.)
