Bread - I use Garlic Sourdough
2 Chicken breasts - cooked and thinly sliced in planes
8-10 pcs Bacon - to taste
Sliced/Diced onion
Minced garlic - to taste
Avocado
Cilantro - chopped
2 canned chipotle chilies
2T adobo (sauce with canned chipotle chilies)
6 Sun-dried tomatoes in oil (halved or julienne cut)
1T Balsamic Vinegar
2T Olive Oil

Prep. Time → 10 min

Cook Time → 30 min

1. You can save some time by pre-cooking the chicken, but otherwise it can be boiled, baked, or barbequed. Slice in planes to a size that will fit within the bread slices. Cook the bacon, set aside. Place bread slices on baking sheet, turn oven to broil and broil bread but be careful to only lightly toast it. Pull out baking sheet, flip bread, and spread desired amount of minced garlic on bread slices. Broil again watching carefully.

2. Slice or chop onion. Make avocado spread with avocado and chopped cilantro. For chipotle sauce use a food processor and add the last 5 ingredients from above. Can add a little water if needed.

3. To prepare sandwiches the garlic side of bread will be the inside. Spread avocado on one side and chipotle sauce on the other, then pile toppings. I recommend cutting in half for easier eating. This is great to do for groups, especially because everything other than toasted bread and avocado spread can be made a day or two ahead of time.
