Sweet corn vegetable soup
Recipe by
Sweet corn kernels-3/4 cup boiled with salt
Spring onion-4tblspn chopped
Carrot- 1 chopped
Mushroom-5 nos chopped
Green Chilli-2 chopped
Pepper powder-1/2 tspn
Eggwhite- of 2 eggs ( beat them salt and keep aside )
Cornflour-1/2 tspn dissolved in 2 tblspn water
Butter/oil-1/2 tspn
Salt
1. Take of sweet corn kernels and grind them to a paste by adding little water.Reserve remaining sweet corn kernels for preparing soup.
2. Heat butter/oil in a deep pan and add spring onion,mushroom,carrot and green chillies.Saute till the aroma comes through the oil/butter.Then add the remaining
1/2 cup of sweet corn kernels and mix well.Add 3/4 cup water.Sprinkle enough salt,cover and let it boil.Then add the pasted sweet corn and pepper powder.
Add the egg white through a strainer.Mix well and cook till the vegetables are cooked well.
3. Then add the corn flour and cook for another 2-3 mints in low flame.
Serve hot.
4. Notes: For boiling sweet corn,take water in a deep pan and boil it by adding salt.
When the water starts to boil put the sweet corn cobs (picture below ) into the pan.Let it cook for apprx.5-7 mints or until the corns are soft.Remove from water and let it cool.Then with a knife cut off the kernels (picture below ) from cobs.
5. For a complete vegetarian soup,avoid egg.
