Sweet potato casserole
Recipe byFilling
2 lb. fresh sweet potatoes (about 4) peeled and cut into 1" cubes
1/2 cup packed light brown sugar
1/2 cup butter
2 eggs, lightly beaten
1/3 cup milk or heavy cream
1 tsp. vanilla or vanilla extract
Topping:
4 oz. chopped pecans (about 1 cup)
2/3 cup packed light brown sugar
1/2 cup all-purpose flour
1/3 cup butter (melted)
1. 1. In a large pot, cover potatoes with cold water and bring to a boil; reduce to simmer until tender (about 30 minutes) 2. Drain and mash til smooth, then let cool for about 15 minutes 3. Preheat oven to 350 4. Combine potatoes and remainder of filling ingredients 5. Spread in buttered 2 quart baking dish (it can be lumpy, and actually sometimes that's good!) 6. In a large bowl, combine pecans, sugar and flour 7. Stir in butter gradually, but leave lumpy 8. Sprinkle pecan mixture over top of potato mixture 9. Bake until top is browned and mixture is set in the center, about
