Tandoori chicken

Marinade
1 large yellow onion, chopped
7 cloves garlic, chopped
1-2" piece fresh ginger, peeled & chopped
3/4 tsp saffron threads (soaked in hot water 15+ minutes)
2 limes, zest and juice
1-2 cups Greek yogurt
2 tsp salt
1.5 tsp coriander
1.5 tsp cumin
1.5 tsp turmeric
1 tsp paprika
1/2 tsp cayenne pepper
1/2 tsp cinnamon
1 tsp garam masala
(1/8 tsp indian red powder for color - optional)
(Lime, Cilantro garnish optional)
6-8 lbs chicken thighs, legs or fryer cutup
Prep. Time → 30 min
Cook Time → 40 min
1. Toss together onion, garlic and ginger in a large bowl. Pour saffron/water and stir together yogurt. Combine all dry ingredients in a small bowl then add to marinade and stir thoroughly. Slice chicken pieces in a couple places to allow marinade to penetrate. (Traditional Tandoori is usually without skin, but kids love chicken skin!) Marinate overnight or at least 6hrs. Grill over medium-high heat until done. Lime can be squeezed over the pieces after cooking if tangier is desired. Can be garnished with Cilantro.
