Teriyaki Salmon of Sarah - Recipefy

2 salmon fillets
2 tbsp teriyaki marinade
Japanese pepper
Juice of one lime
2 nests of fine egg noodles, cooked as per pack instruction
2 peppers, mixed colours
Small bunch of spring onions
Handful of bean sprouts
Pickled ginger and fresh lime to garnish

1. Preheat oven to 180C.

2. Place salmon fillets in an oven-proof dish and coat with teriyaki marinade. Squeeze over with lime juice and add japanese pepper. Set aside for 10 minutes, then bake in oven for 10 to 15 minutes.

3. Finely slice peppers and onions and stir-fry together. Add in cooked noodles, beansprouts and japanese pepper to taste.

4. Serve salmon on bed of noodle-veg mixture and garnish with fresh lime and pickled ginger. Use juice from baking dish as sauce.
