Texas ribs

2kg pork or lamb ribs
2 onions
3 laurel leaves
1 clove garlic, crushed
salt pepper

Sauce
250ml tomato sauce
125ml chutney (hot, mild, original, as you prefer)
1 onion, finely chopped
15ml mustard powder
125ml vinegar
65g can tomato paste
45ml lemon juice
125ml brown sugar
50ml Worcester sauce
250ml stock (from the ribs)

1. Cut ribs in portions and place in big pot with onion, laurel leaves, garlic, salt and pepper, water to cover.

2. Simmer till meat is tender

3. Drain stock, but make sure to retain 250ml stock for the sauce.

4. Place all sauce ingredients in pot and simmer for 8-10min.

5. Brush sauce over ribs and braai (BBQ) over slow coals till brittle and hot.
