2 lbs. dried peas 2 onions, chopped 3 cloves minced garlic 2 tsp. seasoned pepper 1/2 tsp. Tabasco 1 lb. salt pork 1 cup chopped celery and leaves 2 tsp. salt 1 Tbsp. Worcestershire

1. Soak peas overnight. While soaking, cut salt pork into 3 or 4 pieces. Put pork in a large pot with 1 quart of cold water and simmer with lid ajar for 2 hours adding water if necessary. Remove from heat and add 1 quart cold water. Let come to room temperature. Add peas to salt pork and simmer 15 minutes. Add remaining ingredients. Cover and cook 2 hours or til tender.
