Tomato- lentil soup

Ingredients for 4 people
1 TB olive oil
1 large onion finely chopped (1 cup)
1 medium stalk celery chopped (1 cup)
2 cloves garlic finely chopped
2 medium carrots chopped (1 cup)
1 cup dried lentils
4 cups water
4 tsp vegetable bouillon
1 tsp thyme
1 bay leaf
1 can (28 oz) died tomatoes, undrained

Directions
1. In saucepan heat oil medium high
2. Add onion, celery, garlic; cook 5 minutes
3. Stir in remaining ingredients (not the tomatoes); Heat to boil; reduce; cover & simmer 15-20 minutes
4. Stir in tomatoes, simmer uncovered 15 minutes
