Varutharacha Mutton Curry(Mutton in roasted coconut gravy) of Kitchen Snippets - Recipefy

1.Mutton-1/2 kg
Ginger-2 tblspn( use 1 medium large piece)
Green chillies-4-5
Turmeric powder-1/2 tspn
Red chilli powder-1 tspn
Thin Coconut milk-3/4 cup
Curry leaves
Salt

2.To roast & grind

Coconut-1 cup
Small onion-5-6 chopped
Curry leaves
Coriander powder-2 1/2 tspn
Pepper powder-1/2 tspn
Oil- 1tspn (optional)
Salt

3.Tamarind juice-from a goosberry sized ball
Thick .coconut milk-1/4 cup

4.For seasoning

Mustard seeds-1/4 tspn
Small onion-1
Dry red chilli-2
Curry leaves
Oil

1. Pressure cook all the ingredients listed under No.1 for about 3-4 whisles( varies depending on the meat using and the pressure cooker)

2. Meanwhile ,dry roast coconut , small onion and curry leaves till they turn golden brown.then lower the flame and add coriander powder and pepper powder.Saute till the raw smell goes.Just before turning off the heat add 1 tspn oil and mix well.( You can avoid this step; but it enhances the taste)
Remove from fire and let it cool
Grind it into a smooth paste by adding enough water( don't make the paste too watery)

3. Transfer the pressure cooked mutton to a deep pan and add the roasted coconut paste and tamarind juice..Give a good mix ,sprinkle more salt if needed,cover and cook in medium flame for 15 mints or till the mutton is well cooked.

4. Finally add thick coconut milk ,mix well and turn off heat.

5. Heat 1 tspn oil in another pan and splutter mustard seeds.Add small onion,dry red chilli and curry leaves.Saute till the onions turn brown.Turn off heat and pour the seasoning into the mutton curry.

6. Serve hot .Goes well with ghee rice and appam
