Vegan "Meatballs" in Marinara sauce with Garlic Mashed potatoes of DC5veganlifestyle - Recipefy

For the vegan "meatballs"
one cup of chickpeas
one small onion,finely chopped
pinch of fresh parsley
3 chopped garlic cloves
1 tbsp chickpea flour
pinch of salt
pinch of cumin
pinch of coriander
oil(for frying)

For the marinara sauce
1 Barilla classic tomato sauce
half cup of sweet corn
pinch of salt

For the mashed potatoes
7 peeled and cubed medium potatoes
4 cups of water
2 chopped garlic cloves
pinch of salt
vegan butter (I used coconut butter)

Prep. Time → 45 min

Cook Time → 20 min

1. 1.Mix the chickpeas, the onion,garlic, parsley,chickpea flour,salt,cumin and coriander in a food processor
2.Pulse until a thick paste is formed
3.Add the mixture into a bowl and refrigerate for at least 30 min
4.Add water into a medium pot and add the potatoes;let it cook for 10 minutes
5.Add the Tomato sauce, sweet corn and salt into a small sauce pan and let it cook on low for 5 minutes
6.Fill a skilled with vegetable oil and get it ready for frying the "Meatballs"
7.Form the mixture into round balls using your wet hands
8.Add them into the skillet and let them fry for 4 min
9.Pour the water out of the pot with the potatoes,add the garlic,the vegan butter and salt
10.Mash the potatoes
11.Plate your food, and be creative,of course:)
