Veggie Curry of Elizabeth McLennan - Recipefy

4-5 Potatoes diced
2-3 carrots chopped
1 green pepper
1 onion diced
3 celery stalks sliced
2 cloves garlic
fresh green beans cut in half

Blend
2 c. Water
1/2 c. Raw cashews
1 tsp. Onion powder
1 Tbsp. Salt
2 Tbsp. Corn starch
1 can coconut milk (sometimes 2)
2 Tbsp. Curry powder (yellow)
2 Tbsp. Braggs Liquid Aminos
Add more salt to taste

For brown rice do 1 cup rice, 2 c water and 1 tsp salt in rice cooker!

1. Boil potatoes and carrots.
Sauce onion, celery, and garlic.
Add blended mixture to veggies.
Add chopped green pepper and green beans to mixture thicken on medium heat till green beans are cooked but not mushy.
Serve over rice.
